Healthy Summer Recipe – Peanut Butter Slaw | Myprotein.com

Meal prep and healthy food doesn’t have to be boring. Try out our peanut butter slaw recipe this summer on a tasty chicken burger!

Ingredients:

For the satay sauce:
2 tsp. coconut oil
½ white onion (blended into a paste)
2 tsp. garlic paste
1 tbsp. brown sugar
150ml coconut milk (tinned)
150ml water
½ tsp. chilli flakes
1 tsp. soy sauce
2 tbsp. peanut butter
For the slaw:
2 carrots (grated)
¼ red cabbage (finely shredded)
¼ white cabbage (finely shredded)
½ red onion (cut into strips)

Chicken thighs (skin on)
1 lemon
1 clove garlic (finely chopped)
1 red chilli (finely chopped)
Pinch salt
Pinch pepper
1 wholemeal bun
Handful rocket

Method:

• Put the coconut oil into a pan on a medium heat then add the onions and fry for 2-3 minutes, stirring occasionally, then add the garlic paste and fry for a further 2 minutes
• Next, add the remaining satay ingredients, stir well and fry until thickened, about 5 minutes, stirring occasionally
• Once cooked, remove from the heat, allow to cool, and combine with the slaw ingredients
• Serve over succulent chicken thighs in a toasted wholemeal bun, with a squeeze of lime juice
• To cook chicken thighs, place into a roasting tray skin side up, squeeze lemon juice over the top, add chilli, salt and pepper and bake at 200oc for 30 mins until skin is crispy. Toast a wholemeal bun and serve as a burger.
