Pesto and Goat Cheese Kale Flatbreads
Servings: 1 Flatbread (serves 2-3)

For Crust
2 cups of Kale
2 large eggs
½ cup Panko Breading (blended)
½ cup Mozzarella Cheese
Salt and pepper to taste

For Toppings for each flatbread
3 Tbsp Pesto Sauce (Pre-made)
3 Tbsp of Goat Cheese
¼ Green Peppers, julienned
¼ Red Pepper, julienned
¼ cup Mushrooms, sliced

Instructions
Preheat oven to 375
In a food processor or blender, add kale, eggs, breading, cheese, and salt/pepper. Depending on the size of your processor you may need to split all crust ingredients in half and add them gradually.
Once done, remove the “dough” and set aside.
On a baking sheet, add parchment paper, spray with oil, and with your hands knead the kale “dough” to form a rounded flatbread.
Bake at 375 for 5 minutes, then switch the oven to “broil” mode and broil for 5 more minutes
Remove from oven, and add toppings starting with pesto and goat cheese, peppers, and mushrooms.
Place back in the oven for 5 more minutes, and voila!
